Lemon Tarts with a Rosemary Crust

So I have a confession to make. Every time I see something posted by Beaucoup Bakery on Instagram I remember how I really want to learn how to make vegan french pastries. I mean…..look at this…

But I have that’s not the confession. The confession is that I’ll post something spectacular and then Jackie Ellis (owner of Beaucoup Bakery) will send me a message and be all “This is amazing, you are truly gifted…would you please come down to my cafe and train my chefs on how to create some vegan pastries?” Then I’ll be all delightful and charming and shit and she’ll be like ‘Let’s be friends!!’ and basically this will be us:

No need to alert the authorities, I have half-joking plans to become BFF’s with literally hundreds of people. It’s only a matter of time…I’m looking at you Mindy Kahling, Adele, Hilary Clinton, and anyone who has ever played on the Canadian Olympic Women’s Hockey team.

Anyhoo I digress. My first attempt at a pastry was a lemon tart but I wanted to mix it up a bit by throwing some rosemary in there. It ended up pretty tasted but I learned pretty quickly that you can’t cook these with the same instructions for a regular lemon tart because half of mine ended up bubbly and weird. I guess I’m not ready to train anyone after attempting pastries just once. But there’s still time….
