Cashew Parfait with Cuban Rum

I have very vivid memories of my Dad firing up his black Cadillac so we could head to Dairy Queen for a Peanut Buster Parfait. I, myself would opt for the Oreo Blizzard but never the dipped cone. You think I’m going to squander my DQ trip on a dipped cone? Please.

Anyways, I’m still finalizing the menu for my upcoming supper club and thought about recreating that classic summer treat with a vegan and boozy twist.

This was really simple and I bet if you have the patience to wait for everything to cool for more than 5 minutes it will taste event better but I cannot speak about that since I couldn’t wait more than 3 minutes.

It was nice and rich and creamy and not at all excessive if you drink rum straight up with it. NO judgment here!
